Data Summary Sheet - Trans Fat Replacer

 

 

Objectives:

1.  Clean Label
2.  Replace Trans Fats
3.  Improve Texture
4.  Natural / Organic Ingredient needed

 

Ingredient:

Nu-BAKE®

 

Use Rates:

Replace 1 lb of Trans fat with 1 lb. vegetable oil +
0.5% - 1% Nu-BAKE+ 2-3 times water.

 

Special Instructions:


Blend Nu-BAKE with dry ingredients and then add oil or liquid system.

 

 

Observations:      

Product will have equal to better texture and mouth feel.
Additional water can actually reduce the cost of the formulation.
